The snickerdoodle is one of my all-time favorite cookies. It's right up there with chocolate chip. I have high expectations for a good snickerdoodle. I want it to be a chewy cookie that is slightly thick with a nice golden edge for a little crispness. The flavor needs to be light with a slight tang and a sweet hit of cinnamon sugar. And this cookie checks all those boxes.
Over the years I have tried, and modified, countless recipes for snickerdoodles. Each time I would find something I didn't like. They were decent, but not what I was looking for. I almost gave up trying to find the right combinations to achieve the perfect cookie I was looking for when I decided to go back to my old trusty recipe. It turns out the one I had always enjoyed, but for some reason, thought it could be improved, was the exact cookie I was looking for. I could have kicked myself. Nothing else will ever live up to its potential. So at long last, the Snickerdoodle will now have a spot on the menu. I hope you enjoy it as much as I do.
