For those that know me, I am a sucker for a good chocolate chip cookie. I have had a few on the menu over the last year. From a basic chocolate chip cookie to a brown butter version that we have loved for years. Something was still missing for me. I wanted a cookie that was soft and chewy but also had a crunch and the right balance of chocolate. I also wanted it to be large so I felt like I was eating a full dessert even though it was only one cookie.
My Giant Chocolate Cookie not only checks off all those things but it surpasses what you thought a chocolate chip cookie could be. The cookie measures about 4 inches across and weighs 4.5oz. The edges are golden and crisp, the center is soft and the area in between as a bit of a chew. The cookie is filled with both semi-sweet and dark chocolate chips, then topped with a little sprinkle of fleur de sel right before baking. This monster is not something you nibble on but sit down and melt into. To make it even better, a couple of seconds in the microwave will make you think it just came out of the oven.
